A vegetable into an oblong shape with a tapered end, this pumpkin is native to Latin America where it is often served in casseroles and other dishes. Zucchini-like shape, size and texture, Tatum has smooth green skin with white flesh slightly firm. The squash can be baked, fried, or fried to be served as a side dish seasoned with herbs and butter, or as an ingredient in stews, casseroles, or stir-fried Vegetables. In preparing in an oven, the squash can be cooked whole or cut lengthwise down the stem. Available throughout the year, this vegetable is also known as white or Mexican squash Tatum.
